SMOKED SIRLOIN WITH ROCKET

Starter or lunch-dish – serves 6 – 15 minutes

Ingredients
600 g smoked sirloin, sliced meat (butcher)
100 ml mayonnaise
3 tablespoons balsamic vinegar
1 teaspoon truffle puree (jar)
1 tablespoon ginger syrup (bottle)
125 g rocket
1 red onion, sliced
2 tablespoons capers, drained (jar)
75 g Parmesan cheese, shavings
2 tablespoons olive oil

Preparation
To make the sauce, mix the mayonnaise with the balsamic vinegar, the truffle puree and the ginger syrup. Season with salt and pepper and set aside until needed. Toss the rocket with the olive oil and salt and pepper. Drape 100 g of the smoked sirloin on each plate and pour a little of the sauce over and around. Garnish with the rocket, capers, red onion and Parmesan cheese. Serve with toast.
